Cyndi’s Bread Recipe

Now here is a recipe you simply HAVE to try! From nutritionist, Cyndi O’Meara of Changing Habits. Thank You Cyndi for giving me permission to share this delicious bread recipe with you all :)

Ingredients:

2 Cups Flour (organic, unbleached Plain)
1 Cup Super Mix (see recipe below)
1 tbsp cold-pressed oil (macadamia or olive)
1 tsp sea salt
1 1/2  Cups purified water
1 tsp dry yeast or 2cm square of compressed yeast

Mix all ingredients together in a bread maker and press start.  For a lighter bread, reduce the Super Mix and  replace with organic, unbleached flour.

 

Super Mix:

2 cups Rapadura or raw organic sugar
1 cup quinoa or amaranth flour
1 cup sesame seeds
1 cup linseed
1 cup sunflower seeds
1 cup pumpkin seeds
1 cup ground almonds
2 cups organic rolled oats
1 cup maize/polenta
1 cup besan (chickpea) flour

Mix thoroughly and use in bread recipe.  Super Mix makes a large batch to save busy people time – but you can easily make enough for one loaf by substituting cup measurements for tablespoon measurements.

(Super Mix is a complete protein and can be used for breakfast, with soups, or to make sandwiches.)

*Note: You can make this bread, even if you don’t have a breadmaker! Just mix all ingredients and knead as you normally would :)

    I’m concerned to be using so much white flour in this bread recipe… even though its organic… is there another recipe with all whole ingredients?

      Hi Anne,
      Thank you for your comment :) I have been meaning to try this recipe with wholemeal flour but haven’t gotten around to it yet! Perhaps contact Cyndi from Changing Habits, as this is her recipe.
      I mainly make a wholemeal spelt bread that is really nice – I can post that one if you like?
